1 pound (about 4 cups) pecan halves

1 cup granulated sugar

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 teaspoon salt

1 teaspoon pure vanilla extract

1 egg white

1 tablespoon water


Preheat your oven to 250°F (120°C) and line a baking sheet with parchment paper.

In a small bowl, mix together the sugar, cinnamon, nutmeg, and salt until well combined. Set aside.

In a separate large mixing bowl, whisk the egg white and water together until frothy.

Add the pecans to the egg white mixture and stir until the pecans are evenly coated.

Next, sprinkle the sugar and spice mixture over the pecans, stirring until they are well coated.

Spread the coated pecans in a single layer on the prepared baking sheet.

Bake the pecans for 1 hour, stirring every 15 minutes to ensure even coating and prevent burning.

After 1 hour, remove the pecans from the oven and stir in the vanilla extract while the pecans are still warm.

Allow the pecans to cool completely on the baking sheet, then break them apart before serving or storing in an airtight container.
